Going to go with the old stuff:

Egao ni Aitai is Marmalade Boy's OP and I love it ridiculously much. It's also a fun, weird show to watch, if you like romance.

Nanka Shiawase is Flame of Recca's OP and it's the best part of the show. I adore the manga but oh my god the show is... not good. At all. At least the opening song is great.

Give A Reason, Slayers NEXT Opening remains one of my fav. songs of all time.

Yu Yu Hakusho's Smile Bomb (Hohoemi no Bakudan) has already been mentioned but I'll second that.

Ohayou, which is Hunter x Hunter (1999)'s opening has been my wake up alarm song for since it came out and I'm still not sick of it.

And it's not an opening song, but open up your mind in Genosmaden Saiyuki is A+ fantastic and I recommend everyone listen to it because it's gorgeous.
