It's an interesting question. I think that too often it comes from some kind of classism. Someone is seen as sophisticated by a particular group because they are seen to enjoy things that people have been conditioned to see as highbrow, they use words that show their education, ect.
Our brains like to generalize and make assumptions, so unfortunately we sometimes miss the substance of things, but I think that when we meet someone who has a real air of something genuine about them, kindness or charisma or whatever it might be, we know it and feel that it's different to those things that are just sort of social signals.
