I discovered that there's no reason to cook with russets or any other type of potato unless you're making baked potaoes. Chunking or slicing potatoes for roasted, grilled, or any other iteration, you might as well use red vs russet, they just taste better and are reasonably priced. I have never used yellow or "gold" potatoes, it seems like an unreasonable price difference for zero taste difference.

Red potatoes are also apparently really nutritious too. One of the best sources of potassium and Vitamin C.

Gold potatoes actually do taste very different, they're very buttery and make amazing mashed potatoes.
