If you're using an adequate amount of it during the cooking process then this can be true, in some cases. If you mean you think adding salt at any point is unnecessary, then 99% of people who make food for a living will tell you you're wrong, and that your food is probably a boring-ass shadow of what it could be. But do you I guess.

The purpose of adding salt (or other high-sodium additives) to food is, most of the time, not to make it taste salty. It's to make it taste more.
