Battlestar Galactica is the obvious choice. I second the choice of Fraser's The Mummy below.

Does Buffy count as a remake?

Cinderella is one of the Disney live actions that I think is good and also better than the original.

Intensely seconding your picks! BSG is my number one pick for life. I do think Buffy counts! And yeah, I don't LOVE the live action Cinderella, but I agree it was better than the original, and I did like it enough to watch it twice, which is a hell of a lot more than I can say for every other Disney live action remake I can think of.
