To be fair to her, it's not like she knew there was a demon in there. He only claims he's in danger one time after she already makes a show of not unlocking the door and then just begs for her to open the door without any detail.

She could have thought he was exaggerating to guilt trip her.

This was my feeling too. If anything she probably thought it was the same gang dude from earlier that was stressing him out, and didn't necessarily think the gang was in there with him - just that they might have locked him in for the night.

Not saying it was right what she did but she 100% didn't see the Flying Spaghetti Monster's Evil Twin so didn't know she was about to munch on the guy.
