Have not read the book, I assume we're talking about eating regular meat and not cannibalism?

I could easily see how carnivores would be seen as barbaric in the future. Not because of ethical reasons, but because a vegan lifestyle is generally more expensive. And there's also the fact that not everyone can go vegan for health reasons; rich people have a much easier time getting medical help if something goes wrong, so they're also more willing to experiment and switch to a more trendy diet.

Yes, most of her sci fi universe like Dinosaur Planet and the Space Pirates, even to an extent the Acorna and Brain Ship stuff all uses Veganism versus Omnivorous/Carnivorous as gauges of civilizations.

In the Dinosaur Planet/Space Pirates section of the universe, there is a subset of humanity who has been adapted to Heavy G, and due to some abandonment of their colony, they had to resort to at first cannibalism (like the Donner party) and later to eating animal meat to survive. They are looked down upon by most of the galaxy and the "light" humans because of it, even though they do adapt back to Veganism once they have the resources. It's actually a pretty big conflict... along with the planet pirates stuff.
