while I liked them individually as characters, and their relationships with others, their interactions with each other were always awkward and frustrating to watch for me.

Hmm. I totally get where you're coming from, and I think it is a very popular opinion to have, but personally I mostly don't feel this way.

I definitely DO think that their dynamic (specifically their MCU dynamic) tended to bring out the worst in both of them; Steve was at his most self-righteous and condescending when interacting with Tony, and Tony was at his most defensive and needlessly provocative when interacting with Steve. With that said, for the most part I kind of loved that. It could definitely be frustrating--and to be clear, there were plenty of things about their shared movies that I didn't like--but just the basic dynamic they had of bringing out the worst in each other and getting under each other's skin at the best of times, while basically being the twin pillars at the center of the Avengers initiative was super interesting to me, and felt like it had endless potential. (Not that I necessarily love a lot of what was done with that potential--but it was so narratively potent that even after a number of flubs, I still found it compelling.)

And ever since Endgame the entire franchise has felt bloated and directionless to me. But to each their own. It's cool that some people are still getting enjoyment out of the franchise.
