O recommend using a blender (or good processor!). When my grandmother was sick with cancer and losing weight, my mother would put foods in the blender for her -- healthy stuff, a lot of root vegetables, rice and beans (the healthy foods from our culture) and turn them into a puree and that was her food. Was it tasty tasty? It did good enough and kept her healthy!

So, depending on where you are -- maybe blending some squash (it's coming into season) with some cooked barley? Add some chicken or vegetable brother to it for flavor. Adds a bit of carrot maybe? A bit of garlic? Maybe roast the garlic and carrots and veggies first and then blend them with the barley?

I know this is only one recipe, but the idea being you can look online for vegetable based/root veggies & rice meals and blend them into a puree. I hope this helps and that your dad's health improves!

The blended route definitely sounds like the way to go. I'm going to go mad scientist with the blender tomorrow and see what I can whip up. He's still going out on long walks to keep busy (I keep asking him to slow down and rest more but dads will be dads) so something like that that he could drink on the go would be ideal.
