I'm not religious but Iona's "Bi Se I Mo Suil" is quality use of Irish Gaelic. I also really love Clannad's "A Mhuernin O" from Landmarks. Makes me wish Enya had done a lot more Gaelic work like her sister Maire.
My vast library of Japanese music is too broad to pick a favorite. I've also recently gotten into Ummet Ozcan, which is Monglian throat-singing techno.
