YES to the AU thing. I honestly miss the 2015 era of reading so many AOT AUs and the one I think of when it comes to Erwin x Levi is that fic where they kept meeting after every reincarnation throughout various periods of time (like a Victorian era, the cold warr, present day etc).
Just looked it up, it was called 'Again' by Cherry - its unfinished but idk if there could be an ending since they keep getting reincarnated in every chapter.

Oh man Erwin/levi ship was the best. Legit, I too was so disinclined to finish the rest of AOT after what had happened to the ship.

The saddest thing is that I seem to be helplessly attracted to ships that have it all ending tragically. legit went through a couple other ships that have fallen the same fate.

God dang these pairs that are like clearly bonded cats/dogs. Why do ppl always like separating them in canon?? ;0;
