It depends. Some light novels are standalone stories, others are adaptations or side stories of various manga/anime. They’re usually short novels with a few illustrations.

Aren't light novels also the main story/manga but in written form (usually written to a easier degree of writing)?

I swear there are mangas/webtoons out there that are adapted from light novels. And to some degree,those manga adaptations even improved on the original source material.

I mean they could be both, but I've actually seen more LN adapted to mangas than LN that are solely side stories to the original manga.

Yes, it's a whole genre of novels. Some are adapted from manga, some are adapted from anime, some are adapted from computer games, sometimes the LN is the original and then things are adapted from it. They're designed for quick/light reading while you're on the train.
