I'm a big Hannibal fan and never heard of it either, so I had to go look it up!

The gist is, the three foods he mentions are incompatible with the psychiatric meds he's supposedly taking.

But that doesn't even make any sense! He didn't eat the census taker's liver when he was in prison and on psychiatric drugs!

I think someone with his diagnosis wouldn't be on...antidepressants.

He's a sadistic psychopath, lol. (Lol at lol.) I don't think there's a useful drug for that. Maybe a mood stabilizer to reduce aggression and impulsivity, though he if was taking lithium he'd be avoiding alcohol too. He would know, but if it's intentional it's kinda lame anyway.

I choose to headcanon that if he's killing people, they're all assholes. Eh, go kill some rapists or something, bro.

That is one group of many, many, many kinds of psychiatric drugs! There is absolutely no reason to think MAOIs are the ones he's on in prison. Even if he is joking (because Hannibal likes his little jokes) you could equally think he's telling her something he likes to do when he's not being medicated, and wouldn't it be nice if Clarice got him out? (See: the lamb chops later on).

This fan theory was news to me but yeah, sounds kind of BS. Pretty sure there are more than just those three foods that aren't compatible with that kind of medication. I want to say that ANY alcohol consumed with those meds aren't recommended. Hell, I looked it up:

Given the contempt Lecter holds for Chilton, I'm absolutely sure he played the man like a fiddle and is either just taking meds that amuse him or no meds at all.

Though Lecter does like mind games, I'm not sure why he would assume Starling knew anything about medication and food interactions. If, for some reason, he did assume that (and those foods would actually interact with the particular meds he was on), I think it's much more likely he was making a joke, on top of observing her reaction, of course.

Off topic, but I became way more grossed out by that line after I ate fava beans. They're one of the most disgusting things I've ever had to choke down. I can't actually comment on the taste of human liver, but I know for a fact that fava beans are something I cannot imagine eating willingly.
