For FF8, I still am very convinced that Rinoa used her witch powers (if involuntarily because she didn't know how to control her powers yet) to brainwash Squall because the romance/very sudden obsession he develops makes little sense otherwise. I know it's mainly just FF writers being major shit at writing romance like always but in-game that the only explanation I'll accept.

I forgot about this one and while unlike R=U I don't think it was ever the writers' intent, I remember thinking back to the first time I played the game, and how I chose to have Squall give all the "I don't like her"/mean dialogue options (even the internal ones, so it couldn't be the case that he's lying/being mean to her because he likes her or what have you) thinking it was like FF7 and this would mean I'd get to date Selphie or Quistis or Zell or something instead. So at the beginning of the 3rd disc when Squall is all "I love you you mean everything to me" it's quite literally straight out of nowhere for (my) Squall.

Honestly the game would have been vastly improved by taking those dialogue options out -> going gradually with the romantic ones as the game progresses, because that would have felt natural instead of total whiplash. As it stands, sure! Witch powers are the only thing that would make that make sense (aside from extremely bad writing, I mean).

I don't understand this idea people have that romance only ever develops slowly, that no one in real life gets suddenly punched in the face by infatuation.

It's not that romances don't ever occur quickly, it's just... given who Squall is, and given the events as they took place... it made little sense for him to be "suddenly punched in the face by infatuation" at the point he was. The setup for it... the writing wasn't good or convincing.
