OP, are you me?! Obviously not, but #same. I love the Highlands but as a person who tries to watch as much Scottish-made stuff as she can (both film and tv), the preference by movie and showrunners is clear. If you have recs (especially stuff made by Scottish people), would gladly take them.

Not visual media, unless you like very ancient TV, but The Flight of the Heron by DK Broster is a very thoroughly-researched enemies-to-friends novel set during Bonnie Prince Charlie's Rising. One of the protags is a British officer, the other a Highland chieftain. All sorts of possibilities there.

Fic is listed under Jacobite Trilogy; the Scottish TV series is available here (ctrl+f to locate) https://bobmeades-ivil.tripod.com/id13.html It was made in the '60s and resembles early Doctor Who in quality, but was filmed mostly on location.

That is classic highlandism, that is the sort of highlandism that Walter Scott pioneered to ruin Scottish culture. Every movie, book, and tv show, that did that ought to be sealed in a lead container and buried in the heart of Airdrie so it can never escape.
