Question for you, OP, are these shows dubbed or do they have English subtitles at all? I want to get into some dramas like these, and I live in an area with a big Asian population but nearly all their TV shows have no dubbing or the subtitles are in a language I don't understand.

Bonus Question: got any recommendations of where a total noob like me can start? :)

Not OP but take a gander over at the shows on viki.com, they've got a nice selection of subtitled free-to-watch stuff from all over asian drama (chinese, korean, japanese, thai).

I don't think the shows are dubbed in English ever, as they're not really made for consumption outside of China. But generally speaking, the more popular ones will be subtitled either by the production company, or occasionally by fans. You can look on Youtube for the name of the show and add "eng sub" to see if it's on there, but there are also unofficial sites that will stream them for free, such as this one:

As for recs, what do you like? Cdramas cover a range of genres, so it really depends on what you're looking for. I prefer the more brain candy idol drama wuxias myself, they're fluffy with pretty costumes. My favorites so far have been:

The Untamed
Word of Honor
Mysterious Lotus Casebook
Blood of Youth
