Going from context, I'm guessing it's someone who hasn't realized she's a lesbian yet?

Writing gay fanfic (whether M/M or F/F or both) is commonly cited by people in fandom as something that helped them figure out their sexuality.

Sure, and sometimes writing fiction from the POV of this or that gender is what helps people figure out their gender identity.

Assuming all, most, or even a significant number of 'AFAB people who write male characters are eventual trans men' is just as much of a stretch as OP is making. Does it happen? Sure, because for some people it is what makes them realize. Is it statistically significant at all, enough to assume any AFAB writer who writes men is trans? Nope.
