I have to cut back on my carbs. Goddamn, I love carbs so much. :(

Carbs are life! But I also have had to increase my protein intake, and aside from adding more foods with high protein levels (e.g. all the beans, lots of egg whites, etc), I tried just about every protein powder on the market and they were all disgusting. I finally settled on Core Power, it tastes just like chocolate milk.

I went through the same gross protein powder journey. I settled on Premiere Protein and add a little peanut butter powder to it. The pb powder does wonders for me with getting rid of the kind of chalky flavor.

Oh man, I tried the peanut butter powder too. I think it's still in my cupboard, I should probably throw that out. XD

I forgot all about pb powder! I used to mix it with my chocolate soy milk when I was younger lol. But now that I don't consume "plant milks" (or really, any milk unless it's some kind of coffee cream), I don't have much use for the powder.

I'm using big jars of (beef) collagen powder, and I slip it in to coffee, chocolate nutritional drink (powdered), chicken bouillon, and miscellaneous other things. It has a slight smell that I associate with pee for some reason but I can't detect any taste at the level I'm using.
I get a little cup and stir it in with whatever other powders I'm using, then mix all of them with water just off the boil. (That tactic leaves fewer sediments than cold mixing.) Then I mix them with whatever other liquid things are going in.

I like cheese a lot, and my lactose intolerance is mild enough that I can get away with eating hard cheeses.

Full fat dairy ice cream isn't bad, and doesn't hit my morning blood glucose in the way that half the amount of rice would.

If we didn't have carbs we wouldn't have bread, the backbone of humanity. Carbs aren't the enemy, portions are.

That being said, I love a good piece of salmon.

Hell yeah to salmon.

I also enjoy quality beef though that can be hard to find in places. I really hope lab grown beef becomes a thing soon.

I agree that carbs are essential, but given that a lot of store bought carbs (especially bread and packaged snacks) are full of added sugar maybe it's better to cut it out sometimes.
Eating bread every day is not essential. Eating carbs is, and healthier carbs are found in a lot of vegetables and fruits.

beans (lentils and black beans are my favourites), eggs and fish!
for me the secret to cut on carbs is just eating beans with every meal. it's like the perfect substitute for bread to me.

I have a few genres

White bean soup with tomato paste: this is the base for Campbell's Bean with Bacon soup

White bean soup with carrots, onion, and celery: this one I freehand in the Instant Pot with whatever spices I feel like showcasing, often Italian blend or black pepper steak blend, or really anything else in the cupboard. Poultry spice would probably be a good choice too.

Cheese, yogurt, dairy of every kind! Tofu is also cool, it's like cheese in its own way. As for actual animal protein - I love beef but I hate cooking it. Chicken is second in my heart but easier to cook. Pork is ok. Fish can be good but I live far from the ocean so it's hard to get excited about it.

In my experience the best way to replace carbs is with vegetables: lettuce wraps over bread, kale chips over potato chips, or whatever else floats your boat. I just straight up snack on baby spinach instead of popcorn/chips now. It doesn't taste *good* but it has a satisfying crunch.
