She did once renounce her claim on Ranma, but his butthurt ego got so bent out of shape at the thought of a rejection that he subsequently went to extraordinary lengths to make her fall for him all over again. From that point on, she was no longer a stalker. That was all his fault.

TBF, he is considered a second class citizen in his clan because he's male, and thus, by the same village's creepy honor code, his best bet to be treated better is to marry Shampoo.

Also, Shampoo honestly doesn't seem that FORCED. Although it IS creepy that she decided she was in love with Ranma the SECOND he beat her as a male.
