I’ve never seen architecture student, but I see a lot of art and lit majors in the college AUs I’ve read.

Probably because it's somewhat rare IRL and easy to gloss over without much research needed unless the character is going in depth into describing things which most readers wouldn't recognize anyway? Plus they get to sound smart+artsy at the same time without going full on "creative artist" tropes like you'd find with fine arts.

Must be fandom dependent. I've never seen an architecture student and I've read plenty.

It's presumably for the same reason that so many romcom heroes used to be architects, but I don't know what that reason is.

Architect and realtor are jobs writers give characters when they want them to be white-collar middle-class without the cliche of doctor or lawyer.
