Lone comment where I don't get this. So long as you wash your hands routinely I don't see an issue with long nails...

It's because even if you wash your hands regularly, stuff gets trapped under your nails that just washing doesn't clean out.

Regular hand washing isn't going to be enough if the nails in question are really long. You'd need to be scrubbing under each and every finger nail, very thoroughly, from the tip all the way back to the nail bed. Especially if you're handling stuff like raw meat, eggs, etc.
