I make really good deviled eggs. I rarely do it, though, because it's a two day process.

I love deviled eggs! Why is it a two day process? I never heard of that.

I set them on their sides for twelve hours before boiling so that the liquid settles. That plus removing them immediately to an ice bath makes it so you don't get that green tint around the inside, which I cannot stand. I have pretty bad executive function on most days, so I rarely remember to set them up the day before (and I really really hate the green).

I'm a fan of the classic: dry ground mustard, salt and pepper, white vinegar, mayo, and a garnish of paprika for color.

I circumvent this disappointment by purchasing already-boiled eggs.

It's worth the extra dollar.
