There are some great Star Wars EU books that explore the perspective of the Empire and other villains. While still clearly keeping them as who they are in canon.

Yeah, some of them do. I remember the book about Plagueis and Palpatine being along these lines. And Shadows of the Empire and the one (trilogy?) that introduced Thrawn were good. I haven't felt much like keeping an ear out for what's being added to the EU after Disney decided to nuke everything from before, though, so ... if there's been new villain-centric books that are worth reading, since the buy-out, I probably don't know they exist.
