I prefer AirBnB type places, or places that are basically a small apartment with its own kitchen and a small fridge. I like visiting local shops and groceries to pick up stuff for breakfast (baguettes and good butter while in France, delicious whole milk yogurts with fruit) and snacks and just see what's different. I like hitting one museum per day, but leisurely. Might hit a tourist spot if I have time and energy, with attention paid towards tracking down nice places to eat. Doesn't have to be expensive or fancy, but I like good food and trying local specialties.

I like a mix of city stuff for the museums and historical sites, and country for beautiful landscapes and peace and quiet.

Oh, forgot to add: if the vacation is longer than a week, then I like to schedule a day off that's no definitive must-see plan, just relaxing and even napping if I need to, to recharge. I also like just wandering around neighborhoods to take in the non-touristy sites, visit any street markets if there are any, that kind of thing.
