It annoys me so much that Xander became a fully skilled carpenter almost instantly, and a foreman straight after that.

To be fair, in Sunnydale, the qualifications might include 'not dead' and 'won't quit if something weird happens'.

I definitely get that some things just bug you for their breaks from reality, but I can’t imagine wanting to see a character spend longer developing carpentry skills or working their way up the hierarchy of construction.

Not OP, but I imagine it's not so much wanting to see it happen but for it to just happen in the background over a longer period of time.

I just figure the military persona he got during that Halloween episode was a carpenter too, and those skills/memories stuck around like the military ones.

I don't remember that, and I'm glad. That would annoy me too. That's not a trade you learn that easily.

Yeah, though increasing skills over 2-3 seasons would have been fine, and foreman generally involves "is mostly reliable and not on too many drugs" rather than particular skills after the basics.
