Why do you think they were suddenly everywhere? Water bottles have always existed, it's just that the average person didn't own one or if they did, they owned a cheap plastic one.

Then companies realized they could make a fortune if they convinced people they were severely dehydrated at all times and the only way to solve this was by carrying a $50-plus fancy schmancy metal water bottle around, and people fell for it hook, line and sinker.

But most people don't drink enough water. Or eat enough fiber. Or move enough.

Sure, but you don't need a fancy $50-plus water bottle to solve that problem, nor do you need to carry it with you constantly. That's pure marketing.

Exactly!! My cheap plastic bottle I got for hiking almost 20 years ago is good for hiking, I sure don't need it to run errands or even travel domestically.

The marketing really shifted into overdrive when WFH became more common, because before that they were marketed as travel cups to keep in your car for your long commutes, it wasn't even expected you'd take it into work with you. And let's not even get into how many retail jobs outlawed ever having any kind of drinking vessel, closed or not, at the register or your station. And probably still do.
