Mads Mikkelsen - think he looks better at 61 than he did at 39 (when I first saw him, in 2004's King Arthur).

Chris Pine moved from pretty in his 20s (Princess Diaries 2, Star Trek), to hot in his 30s (Unstoppable, Jack Ryan: Shadow Recruit, Star Trek Beyond), to damn in his 40s (The Contractor, Dungeons & Dragons: Honor Among Thieves). Hope the trend continues.
