I think the problem with Joss (based on what I've seen in Buffy anyway) is that he seems to want to focus more on what Buffy wants to make out with rather than fight.

If there were less boring romantic subplots (Though I did like some of them like Xander and Anya) then I'd probably appreciate it more.

That's just your personal preference and not a writing issue though, I liked the drama and romantic subplots in Buffy. I really just loved the whole mixture of drama, comedy, romance, action, horror-lite etc. It worked for me.

But I've enjoyed romantic subplots before but the thing I didn't like the Buffy ones is that most of them never went anywhere for ages

Especially Buffy and Spike. I don't hate the pairing (Though the whole attempted rape thing was just a whaaat moment for me), but they just seemed to talk and talk about how much they loved and hated each other and bleh

Personal preference though, I guess.

I didn't like Buffy and Spike myself, but I don't know how much I can blame Joss for all the inter-workings of the later seasons of Buffy since he wasn't even very much involved (usually his overall ideas were present but he was very busy at the time.)

It's a fine line between personal preference and bad writing though, I don't think Buffy is devoid of bad writing, I just think you have to be careful when pointing to what is and what isn't (I'm no expert at that either.)

LOL. See, and I saw their banter as being way more physical and "less talking, more fucking or punching each other", than Spike going "baw Buffy ILU," and Buffy going "Well I hate you!" It's always interesting to get someone else's take on canon, because the next time I re-watch S5 and 6 I'll keep wht you said in mind, because maybe I wasn't looking for it, so I just didn't see it.
