How can you write fanfic for something if you haven't even watched the show? The characterization would be really off.

I am guilty of this (although I am, and have been, very much a reader and not a writer).
In the one fandom - an anime/manga - which I wrote for anyway*, I used what I had read and watched, read a ton of fanfic, and did outside research on the characters, canon, etc.
Was what I put out particularly good or particularly popular? No, but the comments that I did get were generally positive.
I wouldn't say that it's the 'best' or most fulfilling way to go about writing fanfic, and I'm not inclined to do it again, but I also wouldn't say that what is turned out is automatically going to be horrible or have huge characterization or canon flaws. It's just not as likely to be characterization or canon flaw-free as other fanfics out there. (Which may be a problem in itself, but I'm not going to get into that :P .)

*I had a deep dislike of the source material - I remember that I found the art extremely off-putting - but loved the characters and fanfic.

tl;dr: other materials to look at for canon exist; you may just not get as full or as faithful a picture of canon from them.

But that would be too much effort, so why bother read all that fanfic and research the characters? :/

It's a different experience, sure. For me, I was reading a ton of fanfic for that series even when I wasn't engaged in writing for it, so it didn't feel like much of an extra effort - it was enjoyable :) .
