Well, to be fair, the way Nomura handled the plot very often made it seem as if he thought "OH MAN THIS WOULD BE A REALLY AWESOME IDEA", wrote it in, and... didn't really know how to make it work.

The lot of it was probably just fan-service, but you've got a pretty easy-going guy like Demyx claiming he's got a heart (he could have been, probably was, trying to fool Sora, but you never know), and Axel in FM+ saying "do you really think we don't have hearts?" I think hearts in-game are a lot more complicated than just something that lets you feel emotions, else Ansem and his team wouldn't be studying them so intensely.

There are a lot of different theories about how Nobodies and Heartless work, altogether. I've seen a number that make a hell of a lot more sense than canon. Personally, I see it as being open to interpretation... they're very, very metaphorical games, they just don't immediately come off that way. Probably because, again, the way the plots are handled was less than masterful.
