I know where you're coming from, OP.

It's like: Cinderella was the beautiful, kind, loving girl, so she deserved an OMG!PRINCE.

While Anastacia was less kind and less beautiful, therefore she deserved...a average-looking baker. God forbid the not-so-pretty girl ever ends up with someone gorgeous AND with a nice personality. Nooo, if you're unattractive, you deserve someone with equal looks.

Pretty much this, right here.

The fact of the matter is, there are a ton of movies where average or even flat out ugly guys get gorgeous girls, but the opposite is so extremely rare. You can pay all the lip service you want to ~true love~ and ~compatibility~, but this dynamic highlights and reinforces the fact that unless you're a pretty girl you're ~true love~ isn't going to be anything better than average. Which is sexist and (Hopefully, although it's more true than I would like to admit) unrealistic.

...Except that the point was that she found someone who liked her for her. Yes, he happened to be a baker and not a prince. But it was a way of saying, "Oh, hey, maybe Mother doesn't know best." Lady Tremaine was obsessed with being royalty, to the point that she nearly destroyed the self-esteem of Anastasia.

Yes. Cinderella got the prince. But Anastasia found something more than royalty. She found a man who helped her realize that her mother was abusive and that she deserved more than a shallow marriage based on whether or not her husband was a handsome, rich guy. She found a guy who was to her tastes and not her mother's, even if he was technically below her station.

And, really, think about it. That guy must be damn muscular when you think about the time from and how he has to haul all the supplies for his baking to his bakery after buying said things. And he works all day long in a bakery, where it's hot. He's essentially working all day.

...And I really don't see how he looks average besides being a bit on the heavier side, but as I said, he's very likely pure muscle.
