That was my point - you can't dismiss one detail as "just a joke" because the whole book is a joke.

I honestly think you're just putting too much thought into this. They are obviously making an effort because they are referred to as being 'man-shaped', and as it was stated they are otherwise sexless, ala Tilda Swinton in the Constantine movie (bad example, I know). There's nowhere that states that the default is male, and I imagine Crowley and Aziraphale, having been chilling on Earth for so long, would have bothered to make the choice. Crowley certainly would have, given the nature of his personality.
