I don't get why people are having problems with this? I thought it was totally obvious that they think male should NOT be the default, but is considered so by society/the authors.

According to one reading, angels have to make an effort to have a gender.

If they do not make that effort, they are gender/sexless.

Aziraphale and Crowley are in male bodies, with male pronouns.

So they must be making the effort.

If they are not making the effort, then they are sexless - but still in male bodies with male pronouns.

If this is the case, then the implication is the sexless = male.

Male is the default.

OP hopes this is not the case.

I think I would give Gaiman and Pratchett more credit on that account, but I am biased.

The wording felt unclear to me. Your interpretation is completely reasonable, but I'm not quite sure how I should have instantly gleaned that.
