Course Claremont could've retconned it later anyway...but I was always told by my more savvy comic collecting friends that the Jewish origin didn't appear until the first movie. It's one of many things they pointed out was wrong with it.
Although, tbh, I'm not sure his experience would've resonated as well with viewers if he wasn't Jewish...that's just an observation.

Max Eisenberg was his original name.

They never said he was Romani. In the 1960s they didn't say anything (are you thinking of Doctor Doom? He's Romani) then Claremont wrote him as Jewish without actually saying the word "Jew" - however, Erik's emigration to Israel, his tattoo number, his Jewish friends with whom he was imprisoned in the camps and his family's deaths, and being a Sonderkommando were all historically correct identification as Jewish.
In the very early 90s, there was a storyline where Gabrielle Haller identified him as Sinte (a different "gypsy" group) but this was quickly proven to be a fake identity - lots of people started reading around this time so maybe that's what your friends are thinking of. After that, his identity was established as Max Eisenhardt (he has not actually used this name since the concentration camps, though) a German Jew whose family got as far as Poland before being killed.

Magneto's origin as a Holocaust survivor was revealed in Uncanny X-Men #150 (1982), written by Claremont. Claremont always intended him to be Jewish, but at one point. In Uncanny #199 (1985), he states explicitly he was in Auschwitz because he was Jewish. All the other facts revealed about his time in Auschwitz are consistent with him being Jewish, and inconsistent with him being Roma (i.e. he was a Sonderkommando, he was registered with the government before being sent to the camps)
The confusion comes from the fact that at one point, Marvel was afraid of being considered anti-Semitic for having such a prominent and ruthless villain be a Jew, and for some reason thought it would be "better" if said villain was Roma, so they retconned it.
Currently, Magneto's accepted history is that he was a Jew named Max Eisenhardt who fell in love with a Roma girl and they escaped Auschwitz together and married. Later, when he accidentally destroyed their neighborhood and killed dozens of people, she ran away, and he constructed the Romani Erik Lehnsherr identity to both hide from the authorities and to better find his wife amongst her own people.
