Unless, you know, you think a character showing any interest in the opposite sex whatsoever (or no interest in anyone at all!) is absolutely proven 100% straight forever and ever.

Same for straight characters -- thing is, a lot of characters people say are "canonically straight" never state that they are, and the creator never says that they are. If either of those things happen, yes, they're canonically straight, but a whole lot of people will take an interest in one person of the opposite sex to automatically read that character as completely straight with no other possibilities even being viable.
Thing is, I also don't think canon anything can't be played with in fanworks, if it's done well. This includes taking even actually canonically straight characters and giving them some sort of interest in the same sex... and, yes, taking actually canonically gay characters and giving them some sort of interest in the opposite sex. There are definitely ways to do this badly, god knows, but it can be done well, too.
