In some episodes it seemed like he had some pretty serious body issues (for instance, I remember him saying that whenever he ate a hot dog he would feel guilty for days, or something like that). Of course, in Glee characterization varies like every episode and I think they forgot about it later in the season.

but he was kind of a dick in interviews about the possibility of playing gay "ewww i don't wanna kiss a guy!!!1" so whatever

He actually sort of "reads" bi to me, as far as a fictional character can. But I think that's because they were setting up the possibility of a romantic storyline with Kurt and there were subtle hints in there that could, for those who notice these things, point to him liking boys. But then, of course, he started to pursue women. So I'm not surprised if you're basing this headcanon on mixed signals. (And hell, if you're basing this on finding the idea of Sam being with another dude hot, I can't really blame you either).
