I have the same problem with Liara's romance. Kaidan and Ashley, you interact with and learn about. Liara, by the second conversation, it's romance her or never speak with her again. You don't get to know about her unless you're looking to sleep with her.

Pretty much the only reason why my canon!Shep didn't romance her.

This is why I was so happy with the LotSB dlc - it gave you Liara interaction and some insight to her character without having to romance her.
