I mean, it's not like Katara and Zuko couldn't have hooked up when they were old people. Word of God says that Aang died at a relatively young age, and maybe Mai kicked the bucket a little early, too. It's not unusual for oldies to remarry so that they have company for the rest of their days, so why not get hitched to an old friend? Mai and Aang would probably want their loved ones to not be lonely, anyway.
