Well, yeah, you can. Because usually they're not portrayed as straight, they're portrayed as having an interest in the opposite sex. That means they can be either straight or bi, within canon. If it's never stated either way, both interpretations are valid.
Another question: do you also object to non-canon shipping? say, one character has a relationship with another character within the context of a show or book or movie, whatever. Do you think that shipping them with another character, whom canonically they never were shown as attracted to and/or interested in having a relationship with, is also 'OOC nonsense'? or do you just apply that judgement to sexuality?
