But... We've never had turkey at Christmas. So is it okay if I start now? And besides, waiting until the 25th of December seems like no fun at all.

"Until the turkey hits the table" is American for Thanksgiving, which is the end of November. Christmas is okay after around November 25, making Christmas one month long, not two.
