Because fantasy lit encompasses way more than princesses and dragons and magic (sword and sorcery). There's really no arguing that, tbh--people have argued back and forth about particular books belonging to the genre, especially with things like steampunk that tend to blur the lines between the different subsets of speculative fiction (magical realism gets this a lot too, mostly from lit snobs who look their noses down on fantasy and thus refuse to categorize it as such). But people who define fantasy as simply being S&S are...well, sort of stuck in the '70s tbh. S&S doesn't even make up most of the shelf space in the average SF&F section of Average Big Box Bookstore. Publishers and authors define it as more than that, is the main thing.

Ergo, the badly read comment, which I happen to agree with. S&S isn't even the most popular subgenre, though I'd expect GoT's success to generate more interest. These things tend to be cyclical and trend-driven. Which is good, because I'm getting sort of tired of urban fantasy/paranormal romance.
