I've never much liked having a distinction between male and female with descriptors because, at least in the examples you gave (waiter/waitress, actor/actress), I feel that it unnecessarily singles out women in those professions. To me it seems like people were uncomfortable referring to these women by the given term for the profession as it was only used previously to refer to men and thus a new term was made to draw a line between men and women. I can't think of one that works the other way to single out men in a given profession at the moment, but I'm sure they're out there, and that irritates me too. No one deserves to be singled out for their sex/gender. It's all so stupid to me.
