It's pretty interesting, studying exoplanets. We're finding out that a lot of planets could potentially have a single biome, depending on their distance from the sun, native water content, all sorts of things. Having a planet like Earth, smack in the middle of the habitable zone with a decent atmosphere with multiple biomes, would seem to be comparitavely rare - you're far more likely to get planets a little too close or too dry (and thus deserts), or a little too far out (and thus icy). Water planets are also very much possible. Volcanic planets like Mustafar are possible, too.
It's also really, really likely that we're going to be finding habitable bodies orbiting others! Star Wars has at LEAST two examples - Yavin and Endor are moons orbiting gas giants (presumably, for Endor - we do see a glimpse of what could be a darkish planet during the battle).
There are flaws in Star Wars' astronomy, biology, and general physics, but single biome planets aren't really one of them.
