I agree, if pairings come out of nowhere it can be irritating. I remember a fic that did surprise!poly well enough but even then I was a little like "....whut" for a while before I got on board with it. (This fic also managed the feat of having a prominent female OC romance plot without lots of Mary Sue bullshit, so maybe the author was just magic)
I was actually workshopping a poly fic on a fandom comm a little while ago and was talking about the different pairings, and off-handedly mentioned that I'd put a label at the beginning listing all the pairings that would eventually be included; a few different people went out of their way to thank me for being so considerate. I hadn't even done anything, but I guess the thought counts for a lot.
