I'm a writer myself, and as long as people don't tell me about it, or go reposting their edited versions, I am perfectly okay with others doing this to my stuff.

I do this a lot myself, as well, and I don't feel guilty in the slightest. The writers will never know and the altered product will never be read by anyone but myself. I switch genders a lot for certain types of kinky porn that get written much more often with anal sex (which squicks me because of my hygiene fixation) than vaginal sex. And the rate's gone through the roof in my latest fandom especially, where there are all these great long, plotty, action-packed and heartstring-pulling fics that read like gen... until they take a u-turn into surprise!incest halfway through. Usually with no build-up whatsoever and little in the way of consequences that influence the plot afterwards. Editing them yields the practically the same result as skipping the sex scenes, so, *shrug* In both cases it's just a cleaner and more permanent solution to the problem of my squicks getting in the way of great writing.
