Heee! I'm thinking that either a) she was a good Samaritan who discovered his healing powers and had a revelation/was already a fanatic and just 'married' them so her church wouldn't talk or b) she's an undercover angel hanging around to keep an eye on Castiel, just some very low-level trooper angel who was snatched back to Heaven once he remembered everything.
