I always come up with a ton of backstory and psychology for my characters, and I feel like I'd totally want to post that stuff online. not to yell at anyone getting it wrong, but just to put all the info out their if fans or fanficers want it.

Some people will consider any word from the author's mouth to be gospel, if you'll pardon the expression. Some fans will only consider published supplementary material canon, but not the author's words outside of some kind of narrative format. Typically these people subscribe to the "death of the author" theory but aren't hardcore about it; sometimes, even not taking the words to heart, they will acknowledge that it exists on a "higher plane" of sorts compared to fan speculation, because the mind from which those ideas came is the same mind from which the story came, and the story developed in the juices of those ideas. The hardcore DOTA folks include an annoying vocal minority of upset people who complain bitterly every time an author answers questions for interested parties, because it goes against their head canon, because they feel that once a story has been published it's now "owned" in a sense by the public, and the author pushing their "head canon" on everybody else is somehow wrong. More reasonable hardcore DOTA folks typically just ignore supplemental materials.
There is sort of a careful balancing act here between two reasonable ideas:
1. There are plenty of things an author would have put into the story if they had had time, space, and a good opportunity to fit it in somehow
2. A story exists on its own as a discrete and whole work of art.
I find that there is value in considering the author as well as considering the work alone and separately.
ANYWAY. TL;DR yes it is done and you can do it, especially if you're just putting it out there for whoever wants it
