This fic (http://archiveofourown.org/works/339401/chapters/549142) isn't any of those pairings, but it is so, so so, so good. Seriously, it's one of the best fics I've ever read. The word count is intimidating, but it flows like a fic half the length, and is funny and sexy as hell.

I don't know how many of the "fic canon" you've read, but Something to Hold Onto (http://www.fanfiction.net/s/5278686/1/Something_To_Hold_Onto) is kind of considered "the" Jetko fic. I haven't read all of it, since I don't really like Jetko, but people are constantly reccing it.

The Usual Reasons (http://www.fanfiction.net/s/4340502/1/The_Usual_Reasons) (Sokka/Zuko) is really good, but a oneshot. I haven't found much longfic for this pairing, which is a shame.

There's also "Broken Dragon" (Ty Lee/Azula) and "Memories from the Western Air Temple" (Zuko/Aang), but I haven't read either so I can't speak for them. As far as I understand, opinions vary on them as well wrt tone and characterization.

I have a crapton of oneshot recs as well, but those are the longer ones that I like, or that lots of other people like.

I just started reading The Usual Reasons and I love it so far! I will check out the others when I'm done.

Oneshot recs are good too. I love epic-length fic, but oneshots are really great for those days when I don't have much free time for fandom.

No problem! A lot of the folks who write epic-length slash also have oneshots for their favorite pairings. Those should get you started; Ali Wildgoose in particular has a lot of good oneshots for various pairings, mostly Jetko and Maiko. Her Maiko stuff is awesome.

Do yourself a favor and skip "Broken Dragon". Azula's characterization (really, lack thereof) is downright awful. It proves that a story's popularity doesn't necessarily equate to good quality. For that matter, Tyzula fandom as a whole is wrought with bad!fic, and this is coming from someone who likes the pairing.

"Broken Dragon" is actually pretty terrible. I have no idea why it's recced so much. Azula isn't even recognizable.

You may have already seen these, and some of them aren't technically Zuko/Sokka, but they do focus on Zuko & Sokka. I like them as a couple or as friends/enemies who keep running into each other/whatever. Basically, I just like seeing their personalities play off each other.

By the same author, The Apple Falls Far (http://www.fanfiction.net/s/5786482/1/The_Apple_Falls_Far) (but be sure to read the warnings)

She also wrote an Avatar/Dragonriders of Pern crossover (http://avocado-love.dreamwidth.org/71926.html#cutid1) that *is* Zuko/Sokka, though I'm not sure if crossovers are your thing or not. I'm not the biggest Pern fan, but I still enjoyed that fic.

That's all I've got at the moment. I blame avocodo_love for making me ship Zuko/Sokka. Can you tell? I stayed away from the Avatar fandom due to the crazy shipping wars. Unfortunately, it means I'm not very well-versed in what fic is out there, aside from the few I stumbled across on FFN.
