I dunno, I thought it was character-establishing. It's sorta the Westeros-Whorehouse equivalent of spitting in the customer's food because he bitched about whether the steak was medium when he wanted medium-rare. It shows Peytr as having that disdain for the nobility he caters to, and the petty nature to fuck with people just because he can.
