My favorite is Kabhi Khushi Kabhie Gham. I also like Main Hoon Na, Don: The Chase Begins Again, and Dhoom 2 (I have never seen Dhoom, but I've also never had any trouble following the plot of the sequel, so follow your heart on that one). I still haven't figured out how I feel about Paheli, but it's got an interesting story and some fun music. Kal Ho Naa Ho is heartbreaking, but in a good way. I don't recommend watching it unless you have comfort food handy, and possibly someone to hug. Devdas is monumentally depressing so I kind of hate the plot, but it's really pretty and has incredible dancing. And I absolutely cannot stand Kabhi Alvida Na Kehna (I think that's spelled...mostly right?) since it kind of tries to justify cheating on your spouse, but the friend who got me to watch it really liked it so...follow your heart again, I suppose.

Off this whole list, if I were to pick just one rec, it would be Kabhi Khushi Kabhie Gham. Love, love, love that film.
